Listeria monocytogenes may be in different quantity in food of animal origin. It is able to reproduce in low temperature, in the medium at the low pH value and high concentration NaCl and NaNO2, however to a certain degree each of these factors have a restraining effect. In case of mutual action of these factors there is a possibility of considerable limitation or inhibition of fertilization of this microbe. Obtained termo-bacteriological parameters showed, that heat treatments in range of pasterization temperatures are sufficient process for elimination of this microbe, from foodstuffs.
