A research was conducted on soil management in viticulture at the farm of Istituto Sperimentale per la Viticoltura (Arezzo, Italy). The systems under comparison were: mechanical clean tillage (harrowing), chemical weed control, natural and artificial grass covering. The research was carried out during 1991-1993 using the cv Chardonnay and Sauvignon, both of which were grafted on K5BB. In order to interpret the effects on production of the differing techniques, we examined the weight of grape yield and the chemical composition of the resultant must, paying particular attention to the nitrogenous component, which is important for an optimum fermentation. The dates of the phenological phases and the summer foliage temperatures (via infrared thermometer) were also registered. At the end of the trials we also analysed the floral composition of both types of grass cover, natural and artificial. Among other determining factors, the results obtained underline the importance of soil management on quality and quantity of the grapes.
