Food consumption statistics, their meanings, and their limitations are presented, based upon data compiled by the USDA. Numerous factors, e.g., technological advances, affluence, Federal food programs, health concerns, that have influenced dramatic changes in the American diet (increased consumption of fat, carbohydrates, food additives) over recent years are noted. Major emphasis is given to discussions and supporting data on specific foods in the American diet and the nutrients they provided such as calories, vitamins A, C, B6, 12, 1, 2, 3, iron, and phosphorus.
