La fermentazione malolattica nei bianchi.

ITALIANO: Il metabolismo dei batteri della fermentazione malolattica ha conseguenze poco favorevoli per i vini bianchi. La diminuzione dell'acidita e di alcuni esteri, la formazione di diacetile sono gli effetti negativi piu evidenti del fenomeno. L'esame dei dati riportati nella letteratura ha messo in luce che il 67 per cento (228 su 342) dei campioni di vini bianchi esaminati e stato sede di una fermentazione malolattica almeno parziale. Vengono esaminata le cause di questa situazione; si suggeriscono i procedimenti opportuni controllare la fermentazione malolattica nel corso dell'elaborazione dei vini bianchi.
Show more [+] Less [-]English. The occurrence of bacterial metabolism during malo-lactic fermentation unfavourably affects white wines. A decrease in acidity, in the content of some esters and the production of diacetyl, can be taken as the most manifest unfavourable effects of the phenomenon. From the data so far reported in literature, it turned out that in 67 per cent of the Italian whit wines investigated, a malo-lactic fermentation took place, even though in some cases it was incomplete. The reasons for such a behaviour are investigated and some suitable procedures in order to guide malo-lactic fermentation during the production of white wines are suggested.
