The effect of harvesting paddy at different field moisture contents (FMC), tractor-threshing on varying depths of straw (SD) and drying (D) with the sun and a batch dryer on grain quality was studied at El Carmen, Centeno. Total milling yield (TY) and head yield (HY) were significantly affected by moisture content (MC) of the paddy at harvest. Highest TY was obtained between MC of 20-25 percent (Y=72.96 - 0.29 (MC); R-squared = 0.36), whereas, higher HY was obtained with a MC of 25 percent. Head yields were also affected by SD, with highest HY obtained from threshing using straw depth of between 67.5 - 90.0 cm (Y = -53.6+8.98 (MC) - 0.19 (MC)-squared + 0.13 (SD); R-squared = 0.73** ). There was an interactive effect between MC and SD on the level of unthreshed grains (Y = 17.89 + 1.06 (MC + 1.20 (SD); R-squared = 0.80** ). Method of drying did not affect TY and HY.
