Cheese consumption in America doubled over the last 20 years. Part of the increase is due to fast food sales of cheeseburgers and pizza; health, ethical, and economic reasons account for the remainder. Americans believe that eating less meat, fat (partiularly saturated fat), and cholesterol is better for them. Cheese is a natural alternative, but few realize that cheese also is high in fat (including saturated fat) and cholesterol. Usually, ounce for ounce, natural hard cheese is higher in fat calories; 70-75% of calories in cheese come from fat as compared to 40-80% of calories from fat in animal (meaty) protein. About half of the fat from either source is saturated fat. Cheese is also naturally high in sodium. To provide optimum health benefits from cheese, a guide discusses the types of cheese products (low-sodium, low-cholesterol, low-fat) and a cheese glossary defines terms. Fat content of a variety of cheeses is charted.
