Since ascorbic acid is known to affect absorption of other mineral nutrients, its effect on the bioavailability of zinc was examined by measuring the change in plasma zinc levels in the presence of varying doses of ascorbic acid. No effects were noted on absorption rates at any dose levels, not even when the elemental zinc was incorporated into black bean soup.
