An overview discusses the influence of dietary factors on dental caries incidence. Attention is given to: the relationship of dietary sugar consumption with dental caries; measurement techniques for assessing the cariogenic potential of foods; how to identify "safe" foods; and anti-cariogenic foods. A listing of highly acidogenic foods is given, suggesting that such foods should not be used for between-meal snacks.(wz).
