It was demonstrated that the main sources of the infection of rabbits' carcasses were places where rabbits were eviscerated and their legs cut off. The sanitary state of the carcasses was improved when meat was chilled in a chilling tunnel with a water shower and dried in a drip chamber. To reduce the bacterial contamination during cutting off rabbits' legs a new manual procedure was suggested.
