Drying is the most important step in process of making dietary fibers from sugar beet pulp. As source of dietary fibers beside fresh sugar beet pulp it is possible to use pulp decolorized with hydrogen peroxide. This layer drying models are the way for finding drying kinetics and mechanism of drying. In this study ten thin layer drying models commonly adopted in literature were used to fit experimental results. It was found that the best approximation of experimental results gives Midilli et al. model. Most of the drying of dietary fibers from sugar beet pulp took place in the falling rate period, which is in good correlation with literature data for drying of biological products in hot air.
