[Starch as an auxiliary beer filtration medium]

Maize starch, as an auxiliary filtration agent, does not influence negatively the taste, smell, pH value, colour, opaqueness, microbiological and colloid stability of beer. Filter effectiveness is not reduced when 30% of maize starch is used. By returning the filtering cake with starch (when 30% of diatomite is substituted with maize starch) to the brewhouse, consumption of unmalted raw material is reduced by about 6%. When filtering cake is added at the beginning of processing of marc from unmalted raw material straining time is not longer. Beer produced with filtering cake is equal, by most parameters, to the control one, having even a better foam quality. Usage of maize starch for beer filtering and returning filtering cake with starch to the brewhouse is technologically justifiable.
