Effects of aflatoxin B1 on Escherichia coli, Aerobacter aerogenes and Micrococcus M 104

Certain concentrations of aflatoxin B1 affect morphological and physiological properties of lactic acid bacteria and bacteria of Coli-aerogenes group. The average length of Aerobacter aerogenes cells diminished in proportion with the increase of AFB1 concentration and in Micrococcus M 104 effect of the toxin brings about reduction of cell diameters and formation of longer chains. The applied AFB1 concentrations bring about reduction of acidogenic ability of the 3 investigated bacterial species. In the presence of the toxin, bacteria Coli-aerogenes ferment sugars much more rapidly, with greater gas release.
