Contribution to the study of amino acids content of the main wheat protein fractions

The quantity of some amino acids as well as their relative relationships in the content of main protein groups (albumin, globulin, gliadin, glutenin) was investigated in the high grain yield wheat varieties. The following varieties were investigated: Kragujevcanka-56, Yugoslavia, Zemunka, Zajecarka-149 and Skopljanka. On the basis of the results obtained it could be concluded that the most represented amino acids were glutamic acid and proline in all investigated fractions, then phenylalanine and leucine, isoleucine, aspartic acid, histidine and that there were differences in the content of these amino acids in different protein fractions.
