Pectinase production in liquid apple pomace culture by Polyporus squamosus strain MMOL 87, was studied. Presence of phosphate in the medium (0.4 mol/l) significantly increased production of enzymes and stimulated growth of Polyporus squamosus up to twice the usual amount. Fermentor experiments showed that the synthesis of enzymes was not associated with growth.
