Sugar beet molasses contains considerable amounts of bioactive substances such as amino acids, organic acids whose calcium salts are soluble in water, purin base as nucleic acids compounds, vitamins as bio-stimulators and different mineral substances with an average of 75 potassium ions. Its physico - chemical characteristics show that molasses could be successfully used in controlled applying for human nutrition. On this way availability of molasses could be total, without residues with harmful influence on natural environment. Besides that beneficial compounds in molasses are possible to find harmful substances which are originated from sugar beet or from its processing. The investigations have shown that amounts of harmful compounds in sugar beet molasses are under allowed limits for similar human foods.
