The structure, chemical composition and processing of peas (Pisum sativum) grain for human diet are described. Experience with peas variety "Bohatyr", as part of a programme called "Suvita", indicates that dehulled and hydrotermically treated grains results in products such as dehulled grain instant flakes, flour as well as groats, specially suitable for preparing various highly nutrient diets.
