Influence of packaging on survival of Listeria monocytogenes in poultry meat preserved by combined methodology

The aim of this investigation was to determine the vitality of pathogenic cells of Lysteria monocytogenes used for designed contamination of poultry meat, packed in two different kinds of packaging (aerobic and vacuum). The prepared (contaminated) samples were preserved by combined technique (freezing and ionizing radiation applying defined technological doses) and stored up to 180 days. Lysteria monocytogenes cells were found to be more sensitive to both applied preservation procedures (freezing and ionizing radiation) in aerobically packed samples. In vacuum packed samples Lysteria monocytogenes cells showed radioresistency.
