The paper gives literatura data on finding of Escherichia coli 0157:H7 serotype in the environment, the temperature regimes suitable for their growth, the data on their survival in food stored at refrigerated temperatures, as well as the data about the other physicochemical factors which could be used to prevent the infection of people with this microorganism. The results of our own preliminary research on findings of Escherichia coli 0157:H7 in the samples of beef minced meat from Belgrade market (Yugoslavia), as well as the effect of heat treatment of hamburgers on the survival of this microorganism, were also presented.
