Ochratoxin A is considered to be the most toxic member of the ochratoxins, a group of closely related secondary metabolities of fungal genera Aspergillus and Penicillium. Ochratoxin A is a chlorinated dehydroisocumarin derivate connected through an amide bond to L-beta-phenylalanine at the 7-carboxy group. This compound has been observed as a major disease determinant of porcine nephropathy. It is also presumed to be involved in a fatal chronic kidney disease with affects people in certain districts of Bulgaria, Romania and former Yugoslavia. In addition to its strong nephrotoxicity, hepatotoxic as well as teratogenic, immunosuppressive and carcinogenic properties of ochratoxin A are described. The natural occurrence of ochratoxin A has been demonstrated in human food and animal feed. Shown results include feedstuffs samples tested on presence of ochratoxin A in the period 1994-1999. Total samples of 269 samples were tested, 26 of that number was sunflower mill, which came out 100% positive on presence of ochratoxin A (the highest level: 10 ppm).
