Beer fermentation by immobilised yeast cells today

The paper presents a review of the results of research and application of immobilized cell systems in brewing industry in the last few years. These systems were totally commercialized in case of alcoholic free beer production and secondary fermentation. As far as main fermentation is concerned, investigations are still made at the laboratory and semi-scale levels, though a moment of total industrialization in this segment is rapidly approaching. Our research group gave a specific contribution in this field by developing our own concept (gas-lift bioreactor system) for batch of continuous performance of main fermentation by immobilized yeast cells.
