Variability of wheat quality parameters and its importance in the production of healthy food

The variability of 30 winter wheat cultivars from different countries around the world was studied over a period of three years (1996-1998). Investigated in the study were the major indicators of technological quality: protein content (%) and sedimentation value (ml) as well as grain mass/plant (g) as a reflection of productivity. Highly significant differences were found among the cultivars, study years, and GxE (genotype x environment) interactions for all the traits under investigation. Genetic variance accounted for 44% of total variability of grain mass/plant, 39% of sedimentation value, and 16% of protein content. The influence of variance of environmental factors on phenotype variation ranged from 15% in grain mass/plant to 70% in protein content.
