The effect of fattening technology on the quality of meat for children's food

The organism of a child, especially at younger age, is sensitive to unbalanced diet and presence of residues of harmful chemical substances in it. The most dangerous are pesticides, heavy metals, antibiotics, nitrates and nitrites. Therefore, together with development of the technology, the residue content in raw materials for children's food has been assayed. The influence of methods and intensivity of fattening on the toxicologic indices - accumulating of pesticides, nitrates and nitrites in meat of young cattle and pigs has been studied.
