Study of cytogenetic activity of sodium nitrite and smoke drying aromatizers

It has been established that nitrite in doses of 0.045-4.5 mg/kg does not have genotoxic properties. A detrimental effect of that agent on genetic structure of somatic cells appears only when the dose of 45 mg/kg is applied, which exceeds the maximum permitted dose for humans (8 mg/kg). A study of cytogenetic activity of sodium nitrite and smoke drying aromatizers "Liquid smoke plus", "Taromasmok" and "Tehnos-1", which has been carried out on mammals, did not cause a mutagenic activity in them. A study of comutagenic properties of aromatizers with application of mutagenic antimicrobial compound of dioxidin showed that there was no comutagenic activity in the investigated smoke drying aromatizers in relation to given inductor of mutagenesis.
