New product based on blood plasma of slaughtered animals

Blood of slaughtered animals represents a very important raw material for the production of medicines, products for disease prevention, traditional foodstuffs and animal feed. The chemical structure and biological characteristics of blood of slaughtered animals determine the traditions of its use in the production of foodstuffs. Blood and its fractions can be used as a source of easily-assimilated protein. But it still finds its application only in meat-processing industry in the technology of producing sausages and canned meats, emulsifiers and colour food additives. The plasma protein has exremely high ability, which exceeds that of soybean isolate. While usual concentration necessary for gel formation of globular proteins is 7-10%, the plasma protein forms solid elastic gels with 8.4% of its content in solution. Therefore it was suggested to make a gel-like product with nutritive characteristics on the basis of cattle's blood plasma. When choosing the conditions of deformation, the relative viscosity of a system was decided to be the optimum criterion. The product made on the basis of blood plasma, with addition of natural pulpy carrot juice as a vegetarian ingredient, has pleasant taste and flavour and is rich in vitamins, food fibers, micro- and macroelements. The gel has high nutritional and biological value, high organoleptic qualities and good digestibility.
