Effect of nitrogen nutrition on indicators of technological quality in wheat

Nitrogen nutrition of wheat is needed to achieve a certain level of grain yield and certain technological quality, which also depends on varietal quality. Optimum doses of nitrogen for maximum values of indirect indicators were higher than the optimum doses of nitrogen for maximum grain yield. Technological quality is a complex indicator which may be viewed from several angles: technological properties are integral indicators of quality and quantity of grain components, which may undergo changes in different directions; improvement in one or several indicators does not invariably lead to improved technological quality of wheat. Only when there exists full correspondence among indicators of technological quality is it possible to reliably assess the effect of level of nitrogen nutrition on bread quality.
