Total content of extractive matter in coffee was determined by methylene chloride using extraction with periodical exchange of the extract (Soxhlet extraction). For the determination of purine alkaloid content, i.e. caffeine content as predominant purine compound, the titration in non-aqueous medium was used. The conditions of caffeine extraction from coffee using supercritical fluid extraction (SFE) by carbon dioxide were investigated with the aim of obtaining the caffeine extract, as well as coffee without caffeine. To model extraction of the investigated system coffee - supercritical carbon dioxide use was made of the Reverchon - Sesti Osseo equation, as well as of our modified equation.
