Fullfat soybean grits production by dry extruding procedure

The investigation of the dry extruding procedure was performed with a single-screw extruder. The optimization of the dry extruding procedure with the above mentioned equipment included the monitoring of quality parameters that are important for the evaluation of the antinutrients reduction adequacy - the level of urease activity, trypsin inhibitor content and NSI (nitrogen solubility index) as the functions of varying the technological (operating) parameters. The successful finalization of the optimization of dry extruding procedure, that is, the production of fullfat soybean grits of satisfactory and standard quality, has suggested that dry extruding procedure is the adequate way of thermal soybean treating and that it will be increasingly used in Yugoslavia in future.
