Yeast biomass synthesis in enriched brewing process

Synthesis of Candida utilis biomass on brewery effluents, which are rich in organic compounds, were investigated. Last runnings, brewery spent press liquor grains, hot break spent, retirn beer and beer from bottling machine were used as substrates. With the aim of realizing higher yield of biomass and better removal of remaining substrate, the basic medium was enriched with internal and external sources of N and P in relation to beer production process effluents. When the medium was additionally enriched with the carbon sources (corn wort) and the biostimulators (extract of malt rootlets) the yield of the biomass of Candida utilis was increased from 17 to 19.9 g/l, with the efficiency of substrate removal of approx. 67%. Chemical composition and amino acid's profile of obtained yeast's biomass showed that it presents high value component of food.
