Show more [+] Less [-]This work is aimed to differentiate among three of the most consumd Atalntic tuna species, albacore (Thunnus alalunga), bonito (Sarda sarda) and big-eye tuna (Thunnus obesus), using parameters concerning their phospholipid composition. These species differ from a quality point of voew and consequently, they have different market prices wirh albacore having the highest economic value. The study has been performed in raw, cooked and canned samples analysing variables such as the phospholipid classes distribution and the fatty acyl composition of the total phospholipid and indivifdual phospholipid fractions
