Show more [+] Less [-]The interaction between amine compounds and lipid oxidation products was studied by fluorescence formation at different excitation/rmission maxima. Model systems were employed in order to evaluate the behaviour of diffferent kinds of amine compounds in reacting with cod liver oil at 30ºC along 25 days. The fluprescence shift (δF) produced as a result of the interaction was studied as the ratio between two excitation/emission maxima (393/463 nm and 327/415 nm). Primary amines produced a higher δF than secondary and tertiary amines. The chain length showed little differences; however, a slight increase in the δF value was observed when increasing the chaim length. Finally, amine compounds with less sterie hindrance for the NH2 group produced higher δF levels
