Diseño de una ruta gastronómica para fomentar el turismo en el cantón Francisco de Orellana, provincia de Orellana.

La presente investigación tuvo como objetivo diseñar una ruta gastronómica para fomentar el turismo en el cantón Francisco de Orellana., provincia de Orellana se definieron tres objetivos: evaluación del potencial turístico del cantón, diseño técnico de la ruta y determinación del presupuesto de inversión para su implementación. Metodológicamente, para la primera etapa se realizó el diagnóstico del cantón revisando fuentes bibliográficas; posteriormente, se registraron las manifestaciones del patrimonio cultural gastronómico con ayuda de la ficha del Instituto Nacional del Patrimonio Cultural (INPC) del 2018, y se analizó la oferta turística en cuanto a sus atractivos, infraestructura y planta turística. Para la segunda etapa, se determinó el perfil de la demanda aplicando encuestas y se diseñó la ruta detallando los atractivos, establecimientos, mapas, itinerarios y costos. Para la tercera etapa, se determinaron los activos fijos. Los resultados indicaron que el cantón cuenta con 12 manifestaciones gastronómicas, 19 atractivos turísticos y establecimientos que brindan el servicio de alojamiento, alimentación, operación turística y recreación. Se diseñaron tres rutas gastronómicas, mismas que duran un día y dos días. Finalmente, se determinó para la implementación de la ruta gastronómica el presupuesto total es de: $ 30.400,00. Se concluyó que el cantón tiene potencialidad turística para el desarrollo de rutas gastronómicas. Se recomendó mantener información actualizada del cantón, socializar la presente propuesta con el fin de contribuir a fomentar el turismo, y apoyar estudios de diseño de rutas que permitan dinamizar la economía local.

The aim of this study was to design a gastronomic route to promote tourism in the canton of Francisco de Orellana, province of Orellana; three objectives were defined: evaluation of the tourism potential of the canton, technical design of the route and determination of the investment budget for its implementation. Methodologically, for the first stage, a diagnosis of the canton was made by revising bibliographic sources; subsequently, the manifestations of the gastronomic cultural heritage were recorded with the help of the 2018 National Institute of Cultural Heritage (INPC) file, and the tourist offer was analyzed in terms of its attractions, infrastructure and tourist plant. For the second stage, the demand profile was determined by applying surveys and the route was designed detailing the attractions, places, maps, itineraries and costs. For the third stage, fixed assets were determined. The results indicated that the canton has 12 gastronomic manifestations, 19 tourist attractions and establishments that provide lodging, food, tourist operations and recreation services, three gastronomic routes were designed, lasting one or two days. Finally, a total budget of $30,400.00 was determined for the implementation of the gastronomic route. 1t was concluded that the canton has tourism potential for the development of gastronomic routes. It is suggested to maintain updated information on the canton, to socialize this proposal in order to contribute to the promotion of tourism, and to support studies on the design of routes that will help boost the local economy.
