Starch, a glucose reserve polysaccharide is a common constituent of higher plants found in leaves, roots, shoots, fruits, tubers and seeds and is deposited there as granules of varying shape, size and composition. Starch in all plants is build up from two types of polysaccharides. They consist exclusively of d-anhydroglucopyranosyl monomers which are linked either by α1-4 or by α1-6 bonds to form the macromolecular structures.
