Prevencinių priemonių taikymas jogurto su paprika gamyboje | Application of Preventive Measures to Yoghurt with Peppers Production

Based on the existing literature review, the analysis of the sources on food safety and preventive control measures is performed including an antibiotic test at the milk receiving, a measurement of milk temperature and duration during the thermal treatment and storage of finished products, a pH measurement of a semi-finished product during fermentation. The analysis of red pepper shows that peppers can activate thermogenesis and accelerate metabolism. The following raw materials are used in the production of yoghurt: raw cow milk that meet the requirements of milk purchasing, ferment, puree of peppers that comply with the CODEX STAN 308R-2011 and Commission Regulation (EC) No 2073/2005, plastic and paper/cardboard combined packaging that meet the requirements of HN 16:2011. The final paper provides the description of yoghurt with peppers: in accordance with the Commission Regulation (EC) No 2073/2005, Regulation (EU) No 1169/2011 and No 852/2004, the quality requirements of fermented milk products. Described the flow chart of yoghurt with peppers (raw milk is cooled to +4-6°C, pasteurized at +88±2°C for 5 min, fermented at +40-42°C for 4 hours to pH 4,6-4,5). The analysis of food safety hazards and CCP for the processing of yogurt with peppers was performed: CCP of milk reception – CCP-B1, CCP-C1 and pasteurization - CCP-2B are identified. The paper provides the description of preventive measures in the production of yoghurt with peppers: the prerequisite programs and the plan of laboratory research (raw milk, ferment and puree of peppers at the time of receiving, milk mixture before fermentation, yoghurt after fermentation, chilling and packing, the CIP washing of industrial equipment washing facilities). The premises of the yoghurt processing plant are designed - the total area 559,96 m2. The evaluation of the financial-economic indicators for yogurt with peppers is carried out. The yoghurt prime cost is 1,46 EUR/kg.

Literatūros apžvalgoje išanalizuota maisto sauga ir maisto saugos užtikrinimui taikomos prevencinės priemonės: antibiotikų testas pieno priėmimo metu, pieno temperatūros ir trukmės matavimas šiluminio apdorojimo ir gatavų produktų laikymo metu, pusgaminio pH – rauginimo metu. Išanalizuotas tyrimas apie raudonąją papriką, kuriame nustatyta, kad paprikos gali aktyvuoti termogenezę ir pagreitinti medžiagų apykaitą. Jogurto gamyboje naudojamos žaliavos ir medžiagos yra šios: žalias karvių pienas pagal pieno supirkimo taisyklių keliamus reikalavimus, raugas, paprikos tyrelė pagal CODEX STAN 308R-2011 ir Komisijos reglamento (EB) Nr. 2073/2005 reikalavimus, kombinuota plastiko ir popieriaus/kartono pakuotė pagal HN 16:2011 reikalavimus. Pateiktas jogurto su paprika aprašas: pagal Komisijos reglamento (EB) Nr. 2073/2005, Europos Parlamento ir tarybos reglamento (ES) Nr. 1169/2011 ir Nr. 852/2004 reikalavimus ir pagal raugintų pieno gaminių kokybės reikalavimus. Parengta jogurto su paprika srauto diagrama: priimamas žalias pienas atšaldomas iki +4-6°C, pasterizuojamas +88±2°C ir išlaikomas 5 min., rauginamas +40-42°C 4 valandas, iki pH 4,6-4,5. Aprašyta jogurto su paprika rizikos veiksnių analizė ir numatyti SVT: pieno priėmimas SVT-B1, SVT-C1 ir pasterizacija SVT-B2. Pateiktas prevencinių priemonių aprašas jogurto su paprika gamyboje: būtinosios programos ir laboratorinių tyrimų planas (žalias pienas, raugas ir paprikos tyrelė priėmimo metu, pieno mišinys prieš užraugimą, jogurtas po rūgimo, po atšaldymo ir pakavimo metu, gamybinių įrenginių CIP plovimo nuoplovų kontrolė). Suplanuotos jogurto gamybos cecho patalpos: bendras patalpų plotas yra 559,96 m2. Įvertinti jogurto su paprika finansiniai-ekonominiai rodikliai: jogurto savikaina 1,46 EUR/kg.
