The final paper. Use of carrots and mango fruits in the production of cupcakes. The purpose of the paper. To create cupcake recipes using chopped carrots and mangoes, to perform quality and analysis of products, and to design the production process. The object of the paper. Cupcakes with carrots and cupcakes with mangoes. The structure of the paper. Theoretical part of the paper (scholarly articles) has been described, applied research has been carried out, technological calculations of the intended production have been presented, financial and economic evaluation of the project, conclusions, list of literature and other sources of information. The results of the paper. The recipe of the cupcakes has been improved having introduced carrots and mangoes into the composition aiming to produce a healthy product. The selected raw materials had an effect on the colour and texture of the baked product. Having done a research, it has been identified the moisture content as follows: cupcakes with mangoes 39,34 %, whereas cupcakes with carrots 31,87 %. According to the sensory results, cupcakes with carrots were more acceptable to consumers. In the designed production workshop, one shift will work for 8 hours. During the shift, it is planned to produce 195 kg cupcakes Skonio fiesta and 455 kg cupcakes Oranžine svajone. This would amount to 47580 and 111020 kg per year respectively. In the designed company, the equipment was chosen so that fast and high-quality work would be performed. During the technical process, food safety hazards are evaluated and types of control methods identified. Critical Control Points were established: CCP 1B – storage of raw materials that should be kept at adequate temperatures: the dry raw materials are stored cool (at a temperature of 12 to 18 °C), the egg mass is kept at a constant temperature in the refrigerator (1 to 2 °C) and the storage temperature of other raw materials for refrigerated storage (0 to 6 °C). In order to ensure employee safety, a production manager is assigned as a person in charge of recurring training for employees. After financial - economic calculations it is determined that the price of the planned products Skonio fiesta would be 21,99 EUR/kg, Oranzine svajone - 14,69 EUR/kg, including VAT. The estimated pay off time of the production is 1 year and 2 months. The volume of the paper. The paper includes 48 pages, 15 tables, 4 illustrations, 47 literature sources and 3 appendixes.

Sukurti keksiukų receptūras, panaudojant smulkintas morkas ir mangus, atlikti gaminių kokybės analizę, sumodeliuoti gamybos procesą. Darbo objektas. Keksiukai su morkomis, keksiukai su mangais. Darbo struktūra. Baigiamajame darbe aprašyta teorinė dalis (moksliniai straipsniai), atliktas taikomasis mokslinis tyrimas, pateikti numatomo produkto technologiniai skaičiavimai, finansinis–ekonominis projekto įvertinimas, išvados, literatūros ir kitų informacijos šaltinių sąrašas. Darbo rezultatai. Patobulintos keksiukų receptūros, į sudėtį įtraukus morkas ir mangus, siekiant pagaminti sveikatai palankų produktą. Pasirinktos žaliavos turėjo įtakos iškepusio gaminio spalvai ir tekstūrai. Atlikus tiriamąjį darbą nustatyta, kad keksiukai su mangais turi - 39,34 % , o keksiukai su morkomis – 31,87 % drėgmės. Pagal juslinius rezultatus, keksiukai su morkomis labiau priimtini vartotojams. Suprojektuotame gamybos ceche viena pamaina dirbs 8 val. Per pamainą planuojama pagaminti keksiukų: 195 kg „Skonio fiesta“ ir 455 kg „Oranžinė svajonė“, atitinkamai tai sudarys 47580 ir 111020 kg per metus. Projektuojamoje įmonėję įrenginiai pasirinkti pagal technologinį gamybos procesą, kad darbas būtų efektyvus. Technologinio proceso metu metu nustatyti maisto saugos rizikos veiksniai ir parinktos jiems valdymo priemonės. Nustatytas SVT – 1B – žaliavų sandėliavime. Greitai gendantys produktai privalo būti laikomi atitinkamose temperatūrose: sausos žaliavos laikomos sandėlyje vėsiai (12 - 18 °C temperatūroje), kiaušinių masės šaldytuve palaikoma pastovi temperatūra (1 – 2 °C) ir kitų žaliavų skirtų laikyti šaldytuve laikymo temperatūra (0 - 6 °C). Norint užtikrinti žmogaus saugą darbe vadovaujamasi teisės aktais, gamybos vadovas yra atsakingas asmuo už periodinį darbuotojų instruktavimą. Atlikus finansinius–ekonominius skaičiavimus nustatyta, kad numatomos produkcijos kaina su PVM „Skonio fiesta“ – 21,99 Eur/kg, „Oranžinė svajonė“ – 14,69 Eur/kg, cecho atsipirkimo laikas – 1 metai ir 2 mėnesiai. Darbo apimtis. Darbą sudaro 48 puslapių, 15 lentelės, 4 paveikslai, 45 literatūros šaltiniai ir 3 priedai.
