El concepto de nutrición óptima, encaminada no solamente al cubrimiento de las necesidades nutricionales sino también a la prevención y tratamiento de enfermedades en humanos, ha conducido al diseño de alimentos enriquecidos con nutrientes específicos para tal fin. En el mercado de los alimentos funcionales, se incluyen aquellos enriquecidos con Se, debido a que este mineral genera efectos benéficos para la salud humana, ya que hace parte de la enzima glutatión peroxidaza, cuya función es proteger al organismo contra agentes oxidantes. El objetivo del presente estudio fue enriquecer los huevos con Se a partir de una fuente orgánica, sin afectar los parámetros productivos y de calidad del huevo. Se utilizaron 1920 gallinas ponedoras de la línea Babcock entre la semana 33 a 60 de postura alojadas en jaula, distribuidas aleatoriamente en dos tratamientos. Se evaluaron dos tratamientos, un control (T0), con base en alimento balanceado comercial, sin la adición de Se y el tratamiento T1, con base en alimento balanceado comercial + 0.45 mg de Se Kg-1 de Alimento. Se registró semanalmente la producción y se estimó el % de postura, la conversión alimenticia y la mortalidad. Se evaluaron las características organolépticas del huevo mediante pruebas de degustación y de concepto. El contenido de selenio en huevo fresco fue superior 4.4 veces (P0.05), con un porcentaje acumulado de postura de 88.1 ± 2.11 y 86.2 ± 3.85 para T0 y T1, respectivamente, así mismo no se presentaron diferencias significativas (P>0.05) para los demás parámetros productivos, la calidad y composición del huevo, para la textura del huevo se presentaron diferencias significativas (P

In the market for functional foods, those enriched with Se, because this mineral produces beneficial effects on human health, as it is part of the enzyme glutathione peroxidaza, whose function is to protect the body against oxidants are included. With the study confirmed that it is possible to enrich the content of selenium in the eggs under a commercial system brown egg production without affecting growth performance, organoleptic characteristics and animal welfare. Estimated by including in food is overrun is $ 1.73 per unit of egg. It can be concluded that the production of enriched eggs are technically and financially feasible to improve consumer health and competitiveness of the poultry industry.
