The influences of environmental factors on wheat quality were investigated for 3 years. The most important climatic factors on wheat quality were the average air temperature and precipitation during the ripening period of wheat. A soft wheat having good quality could be obtained from every location in Korea [R.] but a favorable hard wheat with high protein content could be cultivated only in the northern parts of Korea [R.] where the average air temperature during the ripening period of wheat was higher than 18.5 degrees centigrade per day and the precipitation for the period was less than 90 mm per month.
