The calcium, magnesium, inorganic phosphorus and titratable acidity values of carabao milk

Carabao's milk is a rich source of Ca, Mg and P. One hundred milk samples were analyzed and found to have a mean Ca value of 212.98 mg/100 ml with a range of 136.67 mg to 265.75 mg/100 ml. Magnesium varied from 12.46 mg to 34.55 mg/100 ml and averaged 19.80 mg/100 ml milk. These values are higher than those for cow's milk and some buffalo's milk. Its mean inorganic P content (56.40 mg/100 ml) however, is lower than that of cow's milk and ranged from 27.65 mg to 95.79 mg/100 ml. The mean ratio of Ca to Mg in carabao's milk (10.76:1) is slightly higher than that of cow's milk (10:1). The ratios of Ca to inorganic P and Mg to inorganic P are 3.78:1 and 0.35:1, respectively. There is more inorganic P than Mg in carabao's milk. Fresh carabao's milk has a mean initial titratable acidity value of 0.106% lactic acid with a range of 0.106% to 0.221 lactic acid. A significant correlation in the concentration of Ca, Mg, inorganic P and acidity was observed. With increasing initial acidity there was a general increase in these minerals
