The influence of cultivar and storage period in Chinese cabbage on several quality criteria were investigated. Differences of quality criteria in 5 cultivars were discussed. Early cultivar, Naebyung 60 days contented more vitamin C and thiocyanate than others. Decrease of vitamin C, thiocyanate, nitrate, reducing sugar and marketable quality and increase of dry matter occurred during storage
