Genetic and environmental effects on grain texture

A number of different test methods have been used for determining the grain texture. The genetic effect on the kernel hardness is strong. Most spring wheat varieties and a slowly increasing number of winter bread wheat varieties in Europe have hard grain texture. Environmental factors like weather during the ripening, nitrogen fertilization and the water content can modify the grain texture to some extent. The environmental effect is stronger on the pearling test and Berg's sifting test. The flour density is less affected by the environment and is closely correlated to the flour yield
