Carabeef was used in developing "Mara", a dehydrated meat products. Five "Mara" flavors were found possible as determined by expert, laboratory and consumer panel. These were plain blanched, plain unblanched, tapa, crunchies and corned beef. The moisture content of the final products varied from 8.66-11.44% while the crude protein ranged from 66.94-71.30%. The processing yield of "Mara" ranged from 31.3% for the plain unblanched to 25.9% for the corned beef flavored product. The mean sensory scores for "carabeef mara" as evaluated by a consumer panel showed that all the products were scored higher than 3 for texture except the plain blanched flavor. The consumer panel scores for flavor and acceptability followed a similar trend as texture considering only the cost of meat the price of "Mara" ranged from P77.16 to 92.66/kg. The rehydrated "Mara" costs P26.67 to P32.29/kg compared to frozen corned beef P42.00/kg and locally manufactured canned corned beef P12.95/180 g
