Survey on the changes in chemical composition of cassava [Manihot esculenta] root products in Khon Kaen region [Thailand] in 1980
1982
Jowaman Khajarern | Sarote Khajarern
Eighty-three blended samples of cassava root pellets and chips in Khon Kaen region were chemically analysed for the basic chemical parameters. The study was undertaken to monitor the changes in the nutritive value of the products during the year. There was no appreciable improvements in the nutritive value of the products. The moisture content of the chip was increased but the ash content of the pellet decreased making both products identical, in terms of chemical score. Correlation analysis among price, climatic condition and chemical component indicates that the chemical components of the products were still influenced by selling price and climatic conditions rather than by other factors.
