Chemical composition of grain of some wheat varieties

The chemical composition of grain of 20 wheat cultivars grown at large areas of those which played an important role in the creation of new Yugoslav varieties, as well as of new selections that are to be approved or accepted widely, was investigated. The concentration of crude proteins in the grain is 12.3-15.2% of the dry matter of grain, and standard deviation 1.52. The ash concentration varies comparatively a little (1.81+-0.08%), that of oil and cellulose somewhat more (1.9+-0.21 and 2.8+-0.34%). There are notable differences among the cultivars in the content of some macro- and micro-elements (Ca, P, Mg, K, Na, Cu, Mn, Zn and Fe). The most frequently present proteins in all cultivars are those from the gluteline group (32.7+-1.55%), than gliadin (21.8+-1.30%), while albumins, globulins and nitrogen compounds of lower molecular weight make 27.3+-1.66 of the total N fertilizers. Out of amino acids, the most frequent are glutamic acid (33.56+-2.27% proteins) and proline (11.06+-1.98%) and there is the least methionine (1.37+-0.27%) and tryptophane (1.13+-0.08%). The first limiting amino acid, relative to the needs of man was lysine.
