Changes in the sarcoplasmic, myofibrillar and stroma proteins in buffalo skeletal muscles with advancing age

Changes in the sarcoplasmic, myofibrillar and stroma protein fractions of skeletal muscle tissue from 1, 2, 3 and above 5 years old male Murrah buffaloes were studied. The 3 muscles selected for the study were longissimus dorsi, biceps brachei and semitendinosus. Sarcoplasmic protein contents in all the 3 muscles were lower in buffaloes than in cattle. Although no significant variation in the levels of sarcoplasmic proteins was noted between muscles, there was significant increase in these proteins with advancing age. The absolute levels of myofibrillar proteins in buffalo skeletal muscles were similar to those reported in cattle, and these proteins showed a significant decrease with increase in age
