Utilization of mango kernel powder (defatted) by rats

The defatted mango kernel powder was analysed for its starch, protein and lipid content. Rats fed with mango kernel powder, rice flour and wheat flour had more or less similar weight gains. The changes in blood parameters like glucose, cholesterol and protein were evaluated. Mango kernel starch fed animals showed decreased level of blood glucose and cholesterol when compared to other groups. The studies showed that mango kernel starch could be incorported in rat diet at about 40% along with wheat flour or rice flour
