Microorganisms of ripe honey produced in northern Iraq and their effects on its physical properties

Honey samples were collected from different areas in northern Iraq. They were stored at room temperature for three months in sterile glass jars. Results showed that as the moisture content of honey exceeded 18% the total number of yeast and bacteria increased rapidly. While below this percentage the physical properties and quality of honey were not affected through the storage period
