Changes in juice composition accompanying staling of canes

Rates of deterioration of juice quality with time between harvest and milling were monitored in two experiments on burnt and fresh canes in Guyana using variety D141/46 and 10 other commercial and promising varieties. Weather had a dramatic effect on the rates of degradation. Under dry conditions juice only remained stable for 24 hours after burning, compared with 3 days in wet weather. As cane is optimally harvested in dry weather a maximum interval of 2 days between burning and milling is recommended. Juice purity, pol, titratable acidity and reducing sugar content were affected by length of storage, with significant varietal differences in composition and rates of deterioration. Burnt cane should be harvested as soon as possible, however chopped cane did not deteriorate faster than whole stalks
