New technological processes of enzyme starch hydrolysis in the production of new high-dextrose starch-hydrolysate-type sweeteners were investigated. Products of acid enzyme maize starch liquefaction were used as starting substrates. Commercial maize starch was the basic starting material. The used starch did not contain even trace potassium, but it contained 159.89 ppm of calcium. Cellulose percentage was very low.
