The different drying methods used for dehydrating mango pulp are discussed. These involve the use of spray, drum vacuum shelf and foam-mat techniques, using the Badami and Totapuri mango varieties. Drying by spray and vacuum shelf methods, without using drying aids, resulted in poor recovery and poor quality of the dried products. Fair quality was obtained from drum drying. Glycerol monostearate used at levels between 1.5 and 2% (wet pulp weight) bases produced oven stable foam which dried into a product, with a reasonable amount of mango flavour, that was easy to reconstitute
