Enological aspect of red vine varieties in Greece

Although native red wine varieties are cultivated in all vinegrowing districts of Greece, there are only three production areas of large amounts of red wines: (a) the area of Nemea with the excellent variety Agiorgitiko, (b) the double of Peza - Archanes at Heraclion of Crete where the combination of the varieties Kotsifali and Mandilaria is adapted to the production of wines of high quality, (c) the triangle of Naoussa - Amynteon - Goumenissa at Western Macedonia where is cultivated one of the most noble greek vine varieties, the "Xinomavro". Because of these vinegrowing islets, native varieties are distributed in Greece forming ecological systems with strong peculiarities. In the first part of this work, the local vine varieties are described from the enological point of view as they behave in the correspondent well defined regions while the second part refers to the enological behaviour of the foreign varieties Carignan, Syrah, Cabernet Sauvignon and Cabernet franc which were experimentally cultivated in various vinegrowing districts of Greece
