Contents of vitamins C, D and E in mushroom grown on different substrates

The tested mushroom-species differed in their vitamin contents. Contrary to literary data the species were quite rich in vitamin-C. The cap had particularly high vitamin-C content. Of the species Coprinus comatus and Agaricus bitorquis had the highest amount. The substrate did not affect considerably vitamin-C. It is all the more important as the recently developed universal substrate is superior to the traditional manure substrate in point of view of environmental protection and hygiene. Stropharia contained vitamin-D and its pro-vitamin in higher quantities. Vitamin-D was only found in traces in Agaricus. Ergosterol, the pro-vitamin of vitamin-D, was found in every tested species especially in the brown strain of Agaricus and in Pleurotus ostreatus. In our trial vitamin-D content increased 2-3 fold in 1 hour as affected by light. The same phenomenon was observed with ergosterol, too. Vitamin-E was found practically in every tested mushroom species on any kind of substrate. Pleurotus was particularly rich in vitamin-E; the highest content was observed in Lentinus edodes.
